Made socca for the first time and the texture was surprisingly fine and smooth, better than the grainy stuff I've had before. The bag is a good size for trying a few recipes, and knowing it's packed with iron and fiber makes me feel less guilty about the olive oil.
I've been subbing this for regular flour in my banana bread and the texture is surprisingly light for something so high in protein. The bag reseals easily, which I appreciate since I use it sparingly, and it's got that nice earthy, nutty smell when you open it.
