Baked a batch of cookies with this and they came out with a lovely, slightly nutty taste that I haven’t gotten from other flours. It’s sustainably sourced from Sri Lanka, which makes me feel better about using it every week. The bag was packed well, no mess at all.
The texture is so fine it blends into my cookie batter without any gritty spots, which has been my biggest struggle with other flours. These cakes come out with a nice, tender crumb every time, and I appreciate that the coconuts are sustainably sourced.
