The seed mix is really generous—every slice has those little flecks throughout, which makes the crumb look almost rustic. I've hand-kneaded two loaves so far and both came out with a nice crust and soft middle, no trouble at all. Definitely my new go-to for weekend baking.
I've been using this in my bread machine every weekend and the seed mix stays evenly distributed through the loaf, no more clumps sinking to the bottom. The crust comes out with a nice nutty crunch that my family actually fights over.
My hand-kneaded loaves have never risen this beautifully—the seeds add such a hearty crunch to every slice. Even the crust comes out with a lovely nutty texture that I can't get from plain flour.
